Wild Garlic (Bärlauch) Soup

A simple springtime soup made with wild garlic. Known as Bärlauch in German, the green leaves and their strong garlic flavor appear in marshy land in early spring and persist until the beginning of summer, making it a very seasonal flavor.

Ingredients

  • 250g Wild Garlic (Bärlauch)

  • 1 Onion

  • 50g Butter

  • 50g Flour

  • 1L Vegetable broth

  • 100ml Heavy cream

Directions

  • Wash and then finely chop the Bärlauch and the onion
  • In a hot pan with the melted butter, saute the Bärlauch and the onion until translucent
  • Once ready, cover the mixture with the flour and stir
  • Add the vegetable broth and bring to a boil for 15 minutes
  • With an immersion blender, blend the ingredients into a slightly thickened soup
  • Add the cream at this point and remove from the heat, and serve
